The olives are hand-harvested, normally, in mid to late October when the fruit is still mostly green, "invaiatura," before the fruit reaches its full maturity. This precious oil, after pressed, starts with a very low acidity level (0.18 -0.21%), a high number of polyphenols, unsaturated fatty acids, natural antioxidants, and minimal peroxide level. This allow to have a very good extra virgin olive oil. <br /><br><br>
