    GMO (Genetically modified organism): The product does not contain any GMO Physical characteristics: The body is usually silver-gray and it is flattened laterally. The belly is in white or whitish-yellow. The upwards of Linea Lateral is in dark colour. There is a red stain at backwards border of Operculum. There is a golden blonde band in front of head between eyes. At the middle of fin Dorsal specially in individual adult, there is a black band. The backwards of the fin Kandal is black. The nose is longer than the distance between eyes. The lips are thick. The aspect of fresh fish is bright, The eyes are brightly and convex. When the fish lose its freshness, the eyes mist over and cave in. Its Branchias become brightly red. As long as the fish becomes stale, this colour change. Its skin become stretched and bright. When the fishes without squama become stale, its skin lose its brightness, its belly start to wrinkle. At the fishes with squama, the squamas are conjoint to the body during the period when the fish is fresh. Its meat is hard and elastic, when we apply a pressure on the body of fish with our finger, the concavity appeared return quickly to its normal straight form. If the fish is staled, the meat is soft and jelly, so the concavity don't disappear and an ichno stay on the body. Chemical characteristics: The analysis of heavy metal on the product (mercury, cadmium, plumbo, cupric, zink, arsenic) has been made, its convenient according the of marine products Quality Criterion, appendix 7. (Republic of Turkey Agricultural and Farming Ministry, Direction General of Security and Control) Micro biologic characteristics: There is no legal requirement of Micro biologic analysis for the fresh refrigerated product.
